Cooking/freezing ideas!

Need your help friends!

I need some ideas for things that I can cook and freeze ahead of time, but that we’ll actually feel like eating in June!  The thought of turning on the oven is already making me feel hot…but I guess we can’t eat grilled chicken and potato/pasta salad all summer, can we?  😉

    and why not?? no clean-up if you grill all summer. hehe.
    casseroles freeze well? Or baked ziti? Both ideas sound so wintery though, huh? Hmm. I’ll think about it and get back to you when I have more brainpower 😉

    Hmm, tough since most of this would be hot to cook in the summer! One other thought…grilling is easy and fast, if you marinate everything for the month, you could freeze it and then defrost it for the week ahead??

    I know I plan on making and freezing lasagna! I’ll be delivering in hot August, but you can never go wrong with lasagna and a crisp salad 🙂

    We made lots of lasagna, shepard’s pie, and pot pies to prepare for the March baby’s arrival…the summer baby was / will be prepared for by food saver-ing lots of marinated meats!!

    Here’s what we made/recieved that freezed well, quiche, chicken pot pie, baked ziti, meatloaf, meatballs, lasagna, and chicken soup. There were times that we just ate cereal or salad.

    Honestly, we had a warm fall but these things still appealed because I was starving and they were heat and eat!!

    Also, my dad sliced chicken/meatloaf and put it in a storage back with a veggie and rice pilaf or mashed potatoes and froze them in individual servings. This was awesome because then Josh and I could eat different things and didn’t have to heat up an entire casserole etc. so we weren’t sick of it!

    I had so many plans to cook ahead, too! And then little girl came early! You’re so smart to get started now. Mom and I had just started talking about things to freeze, and so far we’d mostly come up with casseroles and enchiladas.

    I’m lucky because we are due in July but it’s winter on this side of the world so I can just have soups and casseroles brewing in the crock pot all day. I also plan to freeze some lasagne and make some savoury muffins to also freeze. Thanks for posting on my blog too!
